Yes, the reason you don’t know what the blue doors in The Last Guardian are, is because you haven’t been killed by the knights yet. Whenever they grab you, you can button mash your way out of their grasp. You likely know this already if you haven’t been taken away through one of the blue doors. If you don’t do this, the knight will carry you toward the closest blue door, which will open up as he gets closer. If you or Trico don’t stop him, he will take the boy through the door and you will receive a Game Over screen.
Simple, but it was baffling me, so it likely confused some other people as well. If you keep avoiding the knights the blue doors will never be a problem for you, so now that you know what they are you can rest a bit easier.
